The MUC truck background In 1972 Our grandad Raul Ramirez Degollado and a family friend Alfonso Hurtado Morellon founded the restaurant "El Bajio" in Mexico City, faithfully dedicated to authentic Mexican food, they started selling (pork) carnitas Michoacan style.After our grandad Raul died our grandma Carmen also known as TITITA took control and it was the start of her great success. After 51 years of hard work, She is now the head of 18 restaurants "El Bajio" in Mexico City and one more just opened recently in Madrid, Spain.In her honour our first cousins opened two restaurants Casa Carmen in New York, USA 2022/2023.So now is the time to bring all these mystic flavors and authentic Mexican recipes to Ireland where the brothers Roberto and Mariano Ramirez Degollado paying tribute to their grandma Titita by opening a food truck named The MUC truck (MUC Irish for pig) and we will follow Titita's steps in the art of cooking all these delicious recipes.
